  • For approximately 14 patacones:
  • 1. 2 green plantains
  • For the hogao:
  • 1. 5 Tomatoes
  • 2. 1/2 White onion
  • 3. Green onion
  • 4. Cilantro
  • 5. Salt, pepper, garlic salt
  • 6. Turmeric, oregano, thyme, and bay leaf (optional)
  • 7. Avocado oil

  1. Preheat the air fryer for about five minutes.
  2. Peel two green plantains by making a lengthwise cut and removing the peel with your hands. Cut the plantains into slices about two centimeters thick.
  3. Place the plantain slices in a bowl and mix with a little avocado oil to cover them evenly.
  4. Place the plantains in the air fryer and cook for about 10 minutes.
  5. Once cooked, flatten the plantains with a pataconera or any flat utensil to form discs. Place the patacones back in the air fryer and cook for another 10 minutes, flipping them to brown on both sides.
  6. To prepare the hogao: finely chop five tomatoes, half a white onion, one green onion, and a handful of cilantro.
  7. Heat avocado oil in a pan over medium heat and add the chopped vegetables.
  8. Optionally, add oregano, thyme, and a pinch of bay leaf and turmeric for color. Add salt, garlic salt, and pepper to taste, mix, and cook for five to six minutes until the tomatoes and onion are soft.
  9. Serve the patacones with hogao and guacamole, and enjoy!

  • Make sure the plantains are very green to get crispy patacones.
  • You can make the hogao while the patacones are in the air fryer.
