- For 6 servings:
- 1. 1 large chicken breast, cooked and shredded
- 2. 1 cup of rice
- 3. 3 to 4 cups of chicken broth (from where the breast was cooked)
- 4. 1/2 red bell pepper, chopped
- 5. 7 hot dogs or 4 sausages, chopped
- 6. 1/2 white onion, chopped
- 7. 2 garlic cloves, chopped
- 8. 1 small can of peas and carrots
- 9. 1/4 cup of ketchup
- 10. Olive oil
- 11. Salt, pepper, paprika, turmeric to taste

- On high heat, cook a chicken breast with 1/2 tablespoon of salt and the seasonings you want (I used green onion and a little cilantro).
- While the breast is ready, let's chop the vegetables: Take the red bell pepper, remove the center with the seeds, and chop it into small cubes... also chop the white onion into the smallest possible cubes.
- Set the vegetables aside and now take seven hot dogs (here you can use hot dogs or sausage, I preferred to use hot dogs), remove the plastic, cut them into slices, and we will also reserve them.
- When the chicken breast is cooked, shred it and remember to reserve the broth to use in cooking the rice.
- In a pan over low heat, add a little of your preferred oil, add half a tablespoon of garlic paste, or you can use two finely chopped garlic cloves. Start incorporating the onion, the bell pepper, mix well, and to add flavor and color, add a teaspoon of paprika, a teaspoon of turmeric, and a tablespoon of salt, mix well. If you want, you can add achiote and let it sauté until the vegetables are soft.
- Add the hot dogs.
- Add the rice, the shredded chicken, the contents of a small can of peas and carrots, 1/4 cup of ketchup, and the chicken broth left over from cooking the breast. I add broth until it covers everything, but at this point, it depends on how wet or dry you prefer the rice. If you want, you can add a little less, or if you like your chicken and rice soupy, you can add a little more.
- Mix to incorporate everything and cover with a lid to let it cook over low heat until the rice is completely dry... and that's it, it's time to enjoy!
