  • For 4 servings:
  • 1. 8 ripe tomatoes
  • 2. 1/2 onion
  • 3. 1/4 red bell pepper
  • 4. 1 tablespoon of salt
  • 5. 2 cups of vegetable or chicken broth
  • 6. 1/2 cup of heavy cream (for serving)
  • 7. Olive oil
  • 8. 1/4 tablespoon of oregano, thyme, and bay leaf

  1. Take 8 ripe tomatoes, remove the stems, and chop them. For this recipe, since we want to make something easy and quick, it is not necessary to remove the skin or seeds, and since we are going to blend it well, they won't be noticeable at all.
  2. Chop half a white onion and 1/4 of a red bell pepper into pieces.
  3. Now in a pan over medium-low heat, put your preferred oil and first sauté the onion and bell pepper for about 2 minutes, then add the tomato.
  4. To season, we will add 1 tablespoon of salt, 1/4 tablespoon of oregano, thyme, and bay leaf.
  5. Add a little sugar to reduce the acidity of the tomato, mix everything well, cover it, and let it cook for about 10 minutes until everything is soft.
  6. When everything is soft, transfer it to the blender and blend with two cups of chicken or vegetable broth. Blend until everything is uniform and bring to a medium heat for 1 or 2 minutes, and that's it. I like it not too thick or too watery; if you like it more watery, you can add a little more chicken broth.
  7. Finally, serve with some shredded chicken and heavy cream. You can accompany it with bread, croutons, or add mozzarella cheese.
