  • For 10-12 skewers:
  • 1. 500g of chicken breast or pork loin, in cubes
  • 2. 1 large red bell pepper, in pieces
  • 3. 1 large green bell pepper, in pieces
  • 4. 1 large yellow bell pepper, in pieces
  • 5. 2 small red onions, in quarters or pieces
  • 6. 250g of cherry tomatoes
  • 7. 200g of small whole mushrooms (optional)
  • 8. For the marinade:
  • 9. 1/4 cup of olive oil
  • 10. 2 tablespoons of balsamic or wine vinegar
  • 11. 1 tablespoon of Dijon mustard
  • 12. 2 garlic cloves, chopped
  • 13. 1 teaspoon of dried oregano
  • 14. 1/2 teaspoon of dried thyme
  • 15. Salt and freshly ground black pepper to taste
  • 16. Skewer sticks (wooden soaked in water or metal)

  1. In a large bowl, mix all the marinade ingredients.
  2. Add the meat cubes (chicken or pork) to the marinade, mix well to cover, and let marinate in the refrigerator for at least 30 minutes (ideally 1-2 hours).
  3. Prepare the vegetables: cut the bell peppers and onions into pieces of similar size to the meat.
  4. Thread the meat and vegetables onto the skewer sticks, alternating them to create a colorful and attractive pattern. Do not pack the ingredients too tightly.
  5. Preheat the grill, griddle, or large pan to medium-high heat. If using the oven, preheat it to 200°C (400°F).
  6. Cook the skewers:
  7. On the grill/griddle: Cook for about 10-15 minutes, turning them regularly, until the meat is well cooked and the vegetables are tender and slightly caramelized.
  8. In the oven: Place the skewers on a baking sheet and bake for 20-25 minutes, turning them halfway through cooking.
  9. Check that the meat is fully cooked before serving.
  10. Serve the skewers hot, alone or accompanied by rice, salad, or your favorite side dish.
